More Than Just a Shape

When Chick-fil-A added French fries to the menu in 1985, the company resisted the industry convention of thin shoestring potatoes. Instead, the kitchen adopted a design that was virtually unseen in fast service: the waffle cut.

What began as a novel visual signature quickly proved to be a superior culinary vessel. The structural rigidity of the waffle shape makes it the ultimate dipping instrument, capable of scooping up sauces without bending or snapping.

The Physics of the Cross-Cut

A classic straight fry has four smooth planes. A waffle fry has a complex three-dimensional lattice composed of dozens of corrugated ridges and intersecting windows.

When dropped into hot canola oil, the heat creates rapid convection currents through these windows. The ridges caramelize rapidly into micro-crunches, while the thicker central intersections maintain a hot, fluffy baked-potato texture.

Real Potatoes and Sea Salt

High quality begins in the field. Chick-fil-A sources premium grade Russet potatoes grown in volcanic Pacific Northwest soils, prized for high starch content and low sugar levels. Low sugar prevents the fries from burning prematurely before the center cooks through.

Leaving the skins on the potato tips provides earthy mineral depth and authentic homestyle character, finished with coarse sea salt that adheres to the glistening oil.
